SUMAC
Sumac is a flowering plants that grows in subtropical & temperate regions throughout the world, especially in East Asia, Africa, and North America. It is popular in Middle East & Mediterranean cooking, used in place of lemon or vinegar giving dishes a bright citrus burst. We partnered with Burlap & Barrel sourcing single origin cured sumac berries that grows wild around Gaziantep, Turkey, where instead of being dried, it’s chopped & packed in salt to preserve & draw out its rich bold flavor.
WILD BLUEBERRIES
Unlike cultivated blueberries, wild blueberries are not planted. They’re spread primarily by rhizomes or underground runners, which give rise to new shoots and stems. Because they are naturally smaller & more compact wild blueberries have a more intense, sweet and fruity taste than cultivated blueberries.
SAFFRON
Our saffron is sustainably cultivated in the deserts of Herat province in western Afghanistan, where it has grown for thousands of years. The threads are extracted by hand then sun dried making this spice immensely valuable & rich in distinctly aromatic flavors of floral & honey .
LEMONS
A species of small evergreen tree, thought to have first grown in Assam & Burma. Originally used only by royalty now widely used throughout all cultures. Lemons are prized for their high levels of vitamin C & strong, bright flavor.
SOUR CHERRIES
Sourced locally our sour cherries hale from upstate NY, taken at peak season. We chose Montmorency sour cherries for its intense flavor & color. These ruby jewels are not only packed with flavor but a nutritional powerhouse found to help reduce sore muscles & inflammation.
MASALA CHAI
Originating in the Indian subcontinent, masala chai is made by brewing black tea with spices & herbs. We use DONA chai concentrate with warming spices: cinnamon, cardamom, clove & ginger ground fresh daily for peak flavor & antioxidant boasting properties.
MOLASSES
The thick, dark & vitamin packed syrup: molasses is what’s left after the sugar has been removed from the juice of the sugar cane. We use molasses to add depth of flavor & a touch of color.
BANANAS
This humble little fruit is actually a berry. Wonderfully smooth, bursting with tropical flavor & packed with nutrients. We use real whole bananas, nothing artificial here.
VANILLA BEAN
The only fruit of orchids. We use sun dried, whole bean vanilla; never extracts. By using the bean we’re able to keep the delicate & complimentary flavor intact: strongly aromatic with warm, floral notes.
STRAWBERRY
Universally beloved a fragrant, sweet, slightly tart & refreshing fruit; beckoning our childhood. The garden strawberry originated in France as a cross between wild berries of North America & Chile. Packed with a multitude of vitamins & nutrients it’s not hard to understand its popularity.
LEMONGRASS
A tropical island plant in the grass family native to the tropical regions of Asia. This herb has a pungent lemony, herbaceous, & sweetly floral flavor. Lemongrass is considered to be an essential plant in the mind-body medicinal practice of Ayurveda.
ROSEMARY
A woody, perennial evergreen herb native to the mediterranean with a layered aromatic flavor: briny, peppery, balsamic taste with a smoky, woody aftertaste. Rosemary has been hailed since ancient times for its medicinal properties ranging from digestion help, memory & even hair loss.
GRAPEFRUIT
A hybrid between the sweet orange & pomelo, grapefruit is a subtropical tree the produces distinctly semi-sweet, somewhat bitter fruit. The juicy flesh of this evergreen is rich in vitamins & antioxidant known to help improve everything from skin to weight loss.
RED JALAPENOS
Chili peppers are actually berries, this one is the vine ripened alternative to its greater know green brother. We chose red jalapeños for their depth of flavor & heat. Capsaicin, the element that gives peppers their punch, is known to help boost metabolism & lower blood pressure.
GINGER ROOT
The rhizome, or main stem, of the herbaceous perennial plant; ginger lends a hot, fragrantly spicy addition to any meal. Ginger has been used for centuries in medicine due to its high levels of gingerol, a substance with powerful anti-inflammatory & antioxidant properties known widely to help digestion.
GARLIC
A bulb in the allium family, garlic has a distinctly strong, spicy flavor that mellows & sweetens when cooked. Unanimous with unami flavor garlic is potent & has been used for centuries for its extremely beneficial medicinal properties; from combatting the common cold to reducing blood pressure.
LIME JUICE
Sour, round, and bright green citrus fruits; limes have higher contents of sugars and acids than lemons do. Nutritional powerhouses high in vitamin C, antioxidants, and other nutrients. Lime juice brings a bright sweet complexity.
CANE SUGAR
A tropical, perennial grass sugar cane is cultivated in the tropics. Raw sugar is extracted from the freshly harvested cane. We use only pure cane sugar processed without bone char to insure quality & that our products stay vegan.
PECTIN
We use pure pectin extracted from the peel of lemon, lime, & oranges. Unlike “normal” pectin our pectin reacts to nutrients in fruit - not sugar. Because there’s no chemical additives or stabilizers our preserves have a naturally soft set.
