Blueberry Sumac Tvaroh Cake (No Bake!)

Ingredients

  • 1 1/4 cup Tvaroh (or full-fat farmer’s cheese**)

  • 1 cup Sour Cream

  • 1/4 cup Powdered Sugar

  • 1 tsp. Vanilla Extract

  • Zest from 1 Lemon

  • ~ 16 Ladyfinger Biscuits 

  • 3 tbsp. Blueberry Sumac Jam

  • 2 cups Fresh Blueberries

Directions:

  1. Line a loaf pan with parchment paper.

  2. Add into a mixing bowl Tvaroh, Sour Cream, Powdered Sugar, Lemon Zest and Vanilla Extract. Mix well until all ingredients are fully incorporated

  3. Place a layer of ladyfinger biscuits on the bottom of lined loaf pan. Spread half of the cream evenly all over the ladyfingers and then smear all of Blueberry Sumac jam on top of the cream

  4. Add a second layer of ladyfingers and then repeat with the remaining cream. Cover the cream with fresh blueberries, wrap the cake into a plastic wrap.

  5. Refrigerate for at least 3 hours or ideally overnight. Serve with your favorite summer lemonade, we suggest this one!

* Tvaroh is a a Slovak-style cottage cheese

** If you can’t find Tvaroh or Farmer’s Cheese you can use full fat cottage cheese. Be sure to press & strain the liquid from the cottage cheese before measuring.
