Strawberry Jam Tarts
Serves 6
Ingredients
- 1 cup all-purpose flour
- ½ teaspoon kosher salt
- 1 stick cold unsalted butter (1/4 lb), cut in 1/8-inch pieces
- 3 tablespoons ice water
- 1 jar Strawberry Lemongrass Jam
- Lemon Saffron Ice cream to serve
Directions
Preheat oven to 375F
- Put flour and salt in the bowl of a stand mixer or food processor. Add butter and quickly cut it into flour until mixture resembles coarse meal.
-Add ice water and mix briefly, about 30 seconds, to form a soft dough. Remove dough, shape into a thick disk, wrap in plastic and refrigerate for at least 2 hours or overnight. Bring to cool room temperature before rolling.
- Split dough into 6 equal parts. Roll each out into a circle about 1/8” thick (as best you can) on a lightly flour counter.
- Line muffin trays with pastry.
-Add a 2 tbs. Strawberry Lemongrass Jam to each pastry "cup"
- Bake at 20-25mins until browned.
** Serve warm or room temp with Lemon Saffron ice cream & tea if you like.
