Cherry Chai Thumbprints
A whole grain, seedy twist on a classic. These cookies are packed with oats & pepitas (pumpkin seeds) making for a guilt free treat.
- 1 cup (2 sticks) butter
- 1 cup packed brown sugar
- 2 Tbsp granulated sugar
- 2 eggs
- 2 tsp vanilla
- 1 1/2 cup flour
- 1 teaspoon baking soda
- pinch of salt
- 1 tsp cinnamon
- 3 cups old fashioned oats
- 1/3 cup pepitas (pumpkin seeds)
- 1 jar Cherry Chai Jam
Preheat oven to 350 degrees.
In a large bowl, cream the butter and sugars together until light and fluffy. Add the eggs, one at a time, and mix well. Stir in the vanilla.
In a separate bowl, combine the flour, baking soda, cinnamon, and salt.
Gradually add the flour mixture to the butter mixture, mixing until fully incorporated.
Mix in the oats, pepitas (pumpkin seeds) & 1 teaspoon of the Cherry Chai Jam.
Place scoops of oatmeal cookie dough 2 inches apart on a greased or parchment paper-lined cookie sheet. Use your thumb to make a hollow well in the each cookie.
Use a piping bag or a spoon to put a dollop of Cherry Chai Jam in the center of each cookie.
Bake for 12 to 14 minutes, or until the cookies look fully baked and the edges are golden.
